Did you know that in Europe only egg whites can be irradiated to kill bacteria like Salmonella? It is a clean technology, but we need a way to check that no one exceeds the dose limits or secretly treats the yolk too. Now a research team has developed a super-fast, eco-friendly method to unmask "treated" eggs.
The trick is to look for two chemical "fingerprints": 2-DCB and 2-TCB. These molecules form only when yolk fats are hit by X-rays. To find them, scientists use a technique called HS-SPME/GC-MS: basically, a special needle absorbs the sample vapors and analyzes them without using toxic solvents.
The result? The test detects minimal doses of 0.5 kGy, well below the legal limit of 3 kGy. Signals remain stable for a month and grow proportionally to the dose received. Plus, compared to the official method, this approach wins on all fronts: it is greener, cheaper, and faster.
